200g spaghetti
100g pancetta or bacon, chopped
2 large eggs
1 cup grated Parmesan cheese
1 tablespoon olive oil
2 cloves garlic, minced
1-2 fresh red chili peppers, finely chopped (adjust to taste)
Salt and pepper to taste
Directions

Cook spaghetti in a large pot of salted boiling water until al dente. Drain, reserving some of the pasta water.
In a large skillet, heat the olive oil over medium heat. Add the pancetta or bacon and cook until crispy. Add the garlic and chili peppers, and cook for an additional minute.
In a bowl, whisk together the eggs and Parmesan cheese. Season with a pinch of salt and pepper.
Remove the skillet from the heat. Add the cooked spaghetti to the skillet with the pancetta, garlic, and chili. Toss to combine.
Pour the egg and cheese mixture over the spaghetti. Use the reserved pasta water to adjust the consistency of the sauce, if necessary. Toss everything together until the spaghetti is evenly coated with the creamy sauce.
Serve immediately, with additional grated Parmesan cheese and a sprinkle of chili flakes, if desired.
